Julius Caesar may not have invented the Caesar salad, but I bet he would love this vegan Caesar salad, which is loaded down with chicken alternative, fresh bread croutons, and a tangy homemade dressing. A snap to make, this salad hits the spot and can be enjoyed any day of the week.
First, get the vegan chicken in the oven; follow package directions. In general, nuggets take from 12-15 minutes to bake. If you are using a baguette that you bake at home, these generally take 7-9 minutes to bake. Therefor, I like to start baking my vegan chicken and then halfway through the cycle, I pop my baguette in the oven. While these are baking, make the dressing.
To make the dressing: add all dressing ingredients to a blender and process until smooth. I love making this in my Ninja bullet! Set dressing aside until nuggets and baguette are finished baking.
Lastly, when the nuggets and baguette are finished baking, remove from oven. Cut vegan chicken into strips. Cut baguette into slices; tear to create croutons. Next layer your salad, starting with a bowl of lettuce, followed by the sliced nuggets and baguette croutons. Drizzle dressing on top and sprinkle with extra nutritional yeast, if using. Enjoy!
